I can answer both of these for you. It's because mailing lists already
_do_ modify the MAIL FROM address, and mail forwarders do not. He's
simply relying on existing practice rather than trying to change it.

That's also why it's more reliable. It relies on something which is
already mostly happening, rather than on something like SRS which isn't
widespread and which is unlikely to ever become so.
