Under the old syntax, it would have been mx:foo.com//126.

Exactly the same way.
MX = 'mx' [ ':' domain-spec ] [ dual-cidr-length ]
dual-cidr-length = [ ip4-cidr-length ] [ '/' ip6-cidr-length ]
So if you don't have an ip4-cidr-length you then have '/' ip6-cidr-length
MX and A dosn't change, it's just ip6 that would change in practice.
