The postfix defaults are right:
# postconf | grep data_done_timeout
lmtp_data_done_timeout = 600s
smtp_data_done_timeout = 600s
Any single admin can override that, though, and some big sites do. I
vaguely remember hearing that Yahoo does?
Then there's the the broken middleware boxes. Last year, Cyrus Daboo
mentioned running into some middleware box that silently discarded TCP
state after 120 seconds of silence. Great fun.
