Well, although it's specified as a SHOULD in the RFC (2822), these
headers are not supposed to be overwritten, but instead, a new set
should be added for every hop.
But, given that's it's a SHOULD, I expect there are some MTAs and/or
MUAs out there that take SHOULDs as IWONTs ;-)
