Because all of this are reserved words.

Documented in RfCs - I'm not sure about root@ and mail.*

SPFv1 will be reserved too !!

It's not the name of a service or protocol like www or
ftp, it's not in a RfC.  Your idea is sound, but it's
only a very minor improvement of the "common practice".

For a real improvement we would need another DNS record
type resp. something like _spf.  And then there will be
a transition period (several years) where old and new
style are used simultaneously.

If we add your idea now and the real improvement later
we get a transition period for 3 styles simultaneously.
That's why I think we shouldn't introduce more hurdles.
